Russian Salad “Vinegret”

Love this healthy and tasty Russian salad with tons of proteins and vitamins.

Russian Salad “Vinegret”

Ingredients:

3 large cooked and diced potatoes

2 cooked and diced beats

3 cooked carrots

1 cup of canned sweet peas

¼ chopped green onion

3 diced dill pickles

1 cup of canned red kidney beans

½ cup of sunflower oil (or olive oil)

1 cup of chopped onion

Salt and pepper to taste

  • Heat ½ cup of sunflower oil in a frying pan. Sauté 1 cup of chopped onions for approximately 10-15 minutes on medium heat, do not burn the onions. They need to be softened and slightly browned.
  • In a large bowl, mix diced potatoes, beets, carrots, and dill pickles. Also add sweet peas, red kidney beans, and chopped green onion.
  • Stir sautéed onions into the mixed vegetables and season with salt and pepper.

P.S. Serve the salad when it’s chilled.

My Delicious Candy!

Decided to make something sweet and yummy, and success! Came up with this yummy candy recipe that everyone in my family just loved! So, I would just call it “My Delicious Candy”, because it’s mine and because it’s delicious. 🙂

My Delicious Candy

Half of La Lechera can

10-15 pieces of crumbly tea biscuits

Half of a cup of walnuts

1/4 of a cup of chocolate

1/2 of a cup of oats

  

Honestly, there are no specific measurements for ingredients. You see how much you need as you go…I tried to take enough pictures, so it would look as easy as it was for me to make it.

1. Crumble tea biscuits and walnuts.

2. Add La Leshera in a mixing bowl and add crumbled tea biscuits, walnuts, and oats to it. Mix it, add more or less walnuts and tea biscuits until the texture is pretty thick.

3. Make balls and roll them in walnuts (see photo), chocolate or oats.

4. Ta Da! It will look beautiful and taste …remember? Delicious! 🙂

Crab Salad

This crab salad is one of my favorite. I love salads made with apples…apples, mayonnaise and corn mixed with chichen or crab meat makes a tasty salad. So, here is one of those. I was introduced to this Crab salad when I still lived in my home country, and I still make it a lot.

Crab Salad

1 package (8 oz) Immitation Crab Meat

3/4 cup shreded mild Cheddar cheese

2 apples

1 cup of Whole Kernel Corn

1/2 cup of mayonnaise (the less mayonnaise, the sweeter the salad)

1. Chop crab meat, apples, and shred cheese if it’s a block.

2. Mix all the ingredients with mayonnaise in a large serving bowl.

3. Make it presentable!

Greek salad recipe my way

I grew up eating Greek salad if not every day, than once per week for sure. So, I never knew that “Cucumber and tomato salad”, that’s what we used to call it, is actually called a Greek salad. To me it was just a salad that goes with any dish, anything you eat, and the more vegetables the better.

The only difference between Greek and “Cucumber and tomato salad” is the dressing. Unlike Greek salad, I use sunflower oil with a little salt to finish “my” salad with, and I will tell you why…When I was a child, back in Moldova, every time I came to my grandma’s house, she had something very tasty to eat. ..and boy, it was good! She always cooked her dishes with sunflower oil and plenty of onion. Sunflower oil, just like olive oil, has its very own taste…and I love the taste of it, because it reminds me of my childhood, and the best grandma in the world…my grandma!

 Greek salad

  • 1 cucumber
    2 medium tomatoes
    ½ cup of pitted Kalamata Olives
    ½ cup of feta cheese, crumbled
    1/2 onion
    1/2 bell pepper
  • ¼ cup of green onion
  • For dressing: 1 tbsp of sunflower oil
  • Salt to taste
  1. Chop tomatoes, cucumber, bell pepper, onion and green onion and combine in a large bowl with Kalamata olives and crumbled feta cheese.
  2. Pour sunflower oil, and add salt to taste.

Tip: I always put chopped tomatoes in a bowl first, salt and toss them and let them sit for a few minutes. Salty tomatoes give a nice juice that I love to dip my bread in after the salad is gone.

Another healthy protein snack

Here is a snack I made before lunch. It’s healthy and filled with proteins…eggs (1 hard-boiled egg has 6g of proteins), avocado (1 avocado has 3g of proteins and is high in fiber), tomato (1 tomato has just 1g of protein, but it is a good source of vitamins C, A, and K), and green leaf letuce filled with vitamin A.

Chicken Almond Salad

After coming home from a grocery store, I realized that I bought the wrong kind of chicken meat for my soup. I always use dark meat for making chicken bouillon, soup or borscht, but had purchased chicken breasts. So, to make more tasty, I put a little more of the meat than usual in the water. After I had fed my family the soup, there was still plenty of chicken at the bottom of the pan. No one in my family eats boiled chicken meat, so I came up with a good idea! I made a healthy delicious salad with it. My husband taught me how to make this Chicken Almond salad a few years ago, when he was trying to lose some weight. The salad is tasty and it has good proteins and vitamins. Here is the recipe for it…

 Chicken Almond Salad

2 cups cooked chopped chicken

2 cups chopped apples

¾ cups sliced almonds

½ cups mayonnaise

Combine chicken, apples, and almonds in a large bowl. Add mayonnaise and mix with a spoon. There you have it! You can always put more apples if you want it sweeter or more almonds if you want it crunchier or more mayonnaise if you want it creamier.

Slow Cooker Chicken Barbecue

I decided to make Zesty Slow Cooker Chicken Barbecue for dinner today. The recipe is from allrecipes.com, and I must say that this website is one of my favorite. It has everything I want to see and read when I cook something new…comments, advice, ratings, nutritional information, serving calculations…and the best thing is that anyone can post their own pictures of the food they made. So, I get an idea of what it should look like once I’ve made it. You would think the website paid me to say all these nice things about it, but no they didn’t. It is not an advertisement (even though it may sound like one 🙂 ). I just really like it. It is easy to use and very helpful for anyone who likes to cook.

Back to my dinner…It has very few ingredients in it, and it’s tasty, easy to make, and the best part of it is that my husband loved it! Try to make it and don’t forget to come back to comment on how yours turned out!

Zesty Slow Cooker Chicken Barbecue

    • 6 frozen skinless, boneless chicken breast halves (I used fresh ones)
    • 1 (12 ounce) bottle barbeque sauce
    • 1/2 cup Italian salad dressing
    • 1/4 cup brown sugar
    • 2 tablespoons Worcestershire sauce

1. Place chicken in a slow cooker. In a bowl, mix the barbecue sauce, Italian salad dressing, brown sugar, and Worcestershire sauce. Pour over the chicken.

2. Cover, and cook 3 to 4 hours on High or 6 to 8 hours on Low.

Beet Salad

Here is one of my favorite salads! It’s a healthy, full of vitamins, and tasty beet salad. I will be posting a recipe of it along with step-by-step photos soon. The salad has beets, cheese, prunes, walnuts, garlic, and mayonnaise in it. Very very tasty! 🙂

My Honey Wheat Berry Bread

Here is the honey wheat berry bread I made yesterday with my Zojirushi breadmaker machine. My husband gave me this machine for Christmas in 2007, and I used it probably 10 times since then. However, it is very easy to use, and I love how it mixes all the ingredients for you. There was a little book of recipes that came with the machine. My favorite recipe is Honey Wheat Berry Bread. I am not sure why it has the word “berry” in it, because there are no berries in the recipe at all. However, the bread is very tasty and somewhat healthy…or better to say, at least I know which ingredients it consists of. 🙂

I was slightly disappointed to find out that most wheat breads have white flour in them. It allows the bread rising better when baking. So, my favorite recipe of a wheat bread consists of 4-1/4 cups of bread flour (which is white flour!) and ½ cup of cracked wheat to make it more healthy. To make it “even” healthier, I used 2 cups of wheat flour and 2-1/4 cups of bread flour.

So, just in case someone has the same machine (Zojirushi Model: BBCC-X20), here is the recipe:

 Honey Wheat Berry Bread

1-3/8 cups – Water

4-1/4 cups – Bread Flour

1/2 cups – Cracked Wheat

3 tbsp – Honey

1-1/2 tsp – Salt

2 tbsp – Butter

2 tsp – Active Dry Yeast…and relax! 🙂

Can there be anything better than hot home-made bread!
