Love this healthy and tasty Russian salad with tons of proteins and vitamins.
Russian Salad “Vinegret”
Ingredients:
3 large cooked and diced potatoes
2 cooked and diced beats
3 cooked carrots
1 cup of canned sweet peas
¼ chopped green onion
3 diced dill pickles
1 cup of canned red kidney beans
½ cup of sunflower oil (or olive oil)
1 cup of chopped onion
Salt and pepper to taste
- Heat ½ cup of sunflower oil in a frying pan. Sauté 1 cup of chopped onions for approximately 10-15 minutes on medium heat, do not burn the onions. They need to be softened and slightly browned.
- In a large bowl, mix diced potatoes, beets, carrots, and dill pickles. Also add sweet peas, red kidney beans, and chopped green onion.
- Stir sautéed onions into the mixed vegetables and season with salt and pepper.
P.S. Serve the salad when it’s chilled.
